Parboiled short-grain rice, naturally processed for idli and dosa batter. Parboiling — a traditional method of steaming rice before milling — keeps the grain firm so it grinds well and ferments cleanly without additives or enhancers.
Soak for 4–6 hours before grinding. Gives idlis their characteristic soft, spongy texture when the batter is properly fermented.
