For Tempering (Tadka):

  • 1 tablespoon ghee or cold-pressed oil
  • ½ teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1 green chili (optional, chopped)
  • 1-inch piece of ginger (grated)
  • 5 to 6 curry leaves
  • Chopped coriander for garnish (optional)

How to Make Bajra Khichdi

Step 1: Soak Bajra
Soak bajra overnight or for at least 6 hours. Drain the water before cooking. You can crush it slightly in a mixer if you want a softer texture.

Step 2: Pressure Cook
In a pressure cooker, add soaked bajra, moong dal, water, salt, and turmeric. Cook for 5 to 6 whistles on medium flame. Let the pressure release on its own.

Step 3: Make the Tempering (Tadka)
Heat ghee or oil in a small pan. Add cumin seeds. Once they splutter, add hing, green chili, ginger, and curry leaves. Sauté for a few seconds.

Step 4: Mix and Serve
Add the tempering to the cooked bajra khichdi and mix well. Garnish with coriander leaves if you like. Serve hot with curd or pickle.
