Main:
- ½ cup foxtail millet (rinsed and soaked for 30 minutes)
- 1¼ cups water
- Salt to taste

- 1 small onion (chopped)
- 1 green chili (chopped, optional)
- 1 tablespoon chopped coriander

- 1 teaspoon urad dal (optional)
- 5 to 6 curry leaves
- A pinch of asafoetida (hing)

How to Make Foxtail Millet Upma
Step 1: Soak and Prepare Millet
Rinse and soak foxtail millet in water for 20 to 30 minutes. Drain and set aside.
Step 2: Cook the Vegetables
Heat oil or ghee in a pan. Add mustard seeds and let them splutter.
Add cumin seeds, urad dal, asafoetida, ginger, curry leaves, and green chili. Sauté for a minute.
Add chopped onions and cook until soft. Then add carrots, peas, and a little salt. Cook for 3 to 4 minutes.
Step 3: Add Millet and Water
Add the drained foxtail millet to the pan and mix well with the vegetables.
Pour 1¼ cups of water, add salt as needed, and stir. Bring it to a boil.
Step 4: Cook the Upma
Cover with a lid and cook on a low flame for 10 to 12 minutes until the water is absorbed and the millet is soft.
Turn off the heat and let it rest for 5 minutes. Fluff with a fork and garnish with coriander leaves.
